I once made this video live on Instagram (follow me on Instagram here) : this vegetable curry is delicious and easy to make. What you need : garlic, ginger and curry powder. Then you will be able to use whatever you find in your kitchen. Zucchini, eggplant, peas, garbanzo beans, beans, broccoli, cabbage, squash, potatoes, carrots… Choose what you like ! My advice : make some homemade naans to go with it !

Liste des ingrédients

  • 400 ml coconut milk (1 ⅔ cup)
  • 2 garlic cloves
  • 2 cm fresh ginger (1 inch)
  • 1 tbsp curry powder 
  • 1 onion
  • 150 ml water (⅔ cup)
  • vegetables : carrots, broccoli, cabbage ...
  • 200 g garbanzo beans (drained and cooked) 1 cup
  • cilantro
  • sunflower oil

Etapes de la recette

  1. Heat the sunflower oil in a wok or large skillet and add the garlic and grated fresh ginger.
  2. Add the curry powder, then the onions and cook for 5 minutes.
  3. Wash the vegetables, peel them and chop them into small pieces.
  4. Add the vegetables and garbanzo beans to the pan (why not add some red lentils)
  5. Cook for 5 minutes and add 150 ml water (⅔ cup) and then the coconut milk. Stir and then simmer for 20 minutes.
  6. If, like me, you want to add some protein, you can use tofu, boiled eggs, shrimp, chicken… The raw ingredients have to be added at the beginning, at the same time as the onion. If you add eggs or tofu, you can do so towards the end.
  7. Sprinkle with cilantro.
